Have you every heard of agar flakes? Also known as Kanten, agar is a vegetable gelatin made from 2 kinds of sea vegetables. They have strong thickening properties. They are boiled into a gel, pressed, dried and shaved into flakes. The flakes dissolve in hot liquids and thicken as they cool.  They are fat-free and cholesterol-free and contain no sugar or sodium. You can find agar flakes at your local health food store. Given them a try in the recipe below for Orange Ginger Custard.
