A couple of weeks ago, I made a traditional apple crisp, which gave me the idea for this modified, but still flavorful version. Use gluten-free oats if needed. Quick oats will have a smoother texture than regular whole rolled oats.
1/4 to 1/2 tsp honey or pure maple syrup
1/2 tsp water
1/2 serving oatmeal, cooked and cooled
Preheat oven to 350. Place apple pieces, honey or maple syrup, a dash of cinnamon and water in food processor and pulse several times until smooth, scraping down the sides of the bowl between pulses. Place applesauce into 6 ounce ramekin. Top with 2-3 tablespoons of oatmeal. Lightly sprinkle with cinnamon and brown sugar. Bake for 8-10 minutes.
