One of our favorite cakes is a Lemon Blueberry cake. We like the combination of sweet berries and tart lemons, so we’ve recreated here in a smoothie. The lemon zest gives it a nice little zing!

 

1/2 cup almond milk (or your favorite dairy-free milk)Blueberry Lemon Smoothie

1/4 blueberries – fresh or frozen

1 banana

2 tsp freshly squeezed lemon juice

1/8 tsp freshly grated lemon zest

 

Blend all ingredients.
