Warm these up in the oven at 350 degrees for just a few minutes to really bring out the ginger flavor.
1 medium-large sweet potato, baked, peeled and mashed (you will end up with about 1 cup of mashed sweet potato)
¼ tsp ground ginger
1 tsp pure maple syrup
1-2 drops vanilla extract
Mix all ingredients until smooth. Use a cookie scoop to scoop cookies onto plate. Flatten slightly and shape into rounds. Dust with cinnamon. Heat in oven if desired (highly recommended!).
