I like the texture of these “custards” – they’re smooth and not chunky like regular gelatin.  They are heart-healthy (no eggs are used) and have no cholesterol. You can use any type of juice you like. I also have made them with pineapple juice which is a nice way to be able to enjoy pineapple without the stringy parts.

1 Tbsp agar flakesOrange Ginger Custard

1 cup orange juice

1/8 tsp ground ginger

cinnamon (optional)

Add orange juice and agar flakes to a pot and bring to a boil. Reduce heat, add ground ginger and simmer for 5 minutes or until agar flakes and ginger are dissolved, stirring frequently. Pour juice mixture into ramekins (you could also use mugs). Put in fridge to chill. These usually set pretty quickly.  Dust with cinnamon.

    • Thank you for catching this omission! You add the ground ginger just after the mixture has boiled, and before you reduce heat to simmer. The recipe has been corrected. I fixed the typo, too. 😀
