Bill wrote in asking about his dad who is on a Dysphagia I diet and loves grilled cheese sandwiches, did we have any suggestions?

Here’s what we came up with:

Use a soft cheese like Swiss or cheddar for smooth melting.Bill's Grilled Cheese

1 serving oatmeal – I used ¼ cup quick oats – cooked and cooled

2 slices your favorite soft cheese

Scoop several spoonfuls of cooked oatmeal into square food mold or cookie cutter and create an even layer.  Layer cheese slices on top and then spoon another layer of oatmeal on top in another even layer. Chill in fridge for about 30 minutes. Heat non-stick skillet over medium-low heat and place sandwich in pan – still in the mold (you can use a very small amount of butter if you don’t have a non-stick pan). Cook for about 4 minutes and remove mold. Carefully flip to cook on the other side, another 4 minutes or until cheese is melty.
