Baked Acorn Squash Rings

I love the shape of these “rings.” Make sure to cut away the outer edge (skin) and only eat the squash – it becomes quite soft when baked.


1 acorn squash – cut crossways into ½ inch slices, remove seeds

Olive oil

Salt and pepper


Preheat oven to 425°F.

Place squash rings on a baking sheet and lightly brush with olive oil. Sprinkle with salt and pepper. Bake for 25 minutes.

Cranberry Orange Sauce/Custard

I wasn’t sure what to call this. It’s tangy like cranberry sauce, but has the texture of a custard – super smooth. You can vary the ratio of cranberry  juice and orange juice to suit your taste.

¾ cup cranberry  juice

¼ cup orange juice

1 Tbsp agar flakes

Combine both juices in a sauce pot. Add agar flakes. Bring to a boil, reduce heat stirring frequently, and simmer for about 5 minutes or until agar flakes dissolve. Pour into 2 6 ounce ramekins and chill in fridge.

Pumpkin Pie

Ok, I cheated a little on this one. Take your favorite homemade or store bought pumpkin pie and cut out a “slice” of filling only (no crust). It will keep its shape in the plate.
