The deep orange color and slightly sweet flavor of the yam contrast nicely with layers of ricotta and spinach. If you don’t have a food mold, you can create layers in any shape you like.

1 medium yam, baked, peeled and mashedYam Spinach Strata

1 1/2 cups frozen spinach

salt and pepper

1/4 cup ricotta


Saute or steam the spinach, season with salt and pepper to taste. Blend until smooth (you may need to add a little water). Using a 4-inch round food mold, spoon in 1/2 the yam as the bottom layer. Add 2 tablespoons of ricotta, 2 tablespoons of spinach, then 2 more tablespoons of ricotta, smoothing out each layer with a spoon. End with a layer of yam. Carefully remove mold.
